Fourth of July Food!

After a week of girls camp, and a week at my in-laws house, I am so ready to get back to my usual eating habits. It’s so hard to stick to what you’re used to when someone else is doing the cooking. Especially when the food is so so delicious! I must admit, I ate my fair share and then some!

Today was my family’s first full day home, and it also happens to be the 4th of July. A major Barbecue holiday. I’ll be honest, we’re a little worn out on burgers and hot dogs. So, I decided to go the chicken route. I’m so glad I did! I made a delicious bbq lime chicken. I marinated the chicken for 2 hours in lime juice, a little sea salt, and some onion powder. Then, when it was time to grill, my hubs brushed on a light layer of barbecue sauce.

With that, I sliced up some zucchini, and yellow squash, and coated them in lemon juice, and lemon pepper seasoning. Then we threw those on the grill too.

I also made a spinach and strawberry salad. One of my favs! I made a citrus vinaigrette, to serve with the salad.

This was a pretty citrus heavy meal, but the flavors of the lemon, lime, and orange paired really well together. We had a delicious holiday meal, that was clean and healthy. Just exactly what I’ve been craving for the last few days. I’m a happy girl!

Lime Chicken:

4-6 chicken breasts

Juice of 2 medium limes

1 tsp. onion powder

salt and pepper to taste

Marinate for 2 hours and grill over medium heat till cooked through.


Lemon Pepper Squash:

1 large zucchini sliced thick

1 large yellow squash sliced thick

Juice of one large lemon

lemon pepper

Coat the squash with the lemon juice, and sprinkle the lemon pepper to your taste. Grill over medium heat till soft, and cooked through.

Spinach and Strawberry Salad:

1 bunch of spinach washed

5-6 strawberries washed and sliced

1/4 cup sliced almonds


Citrus Vinaigrette:

1 Tbs. rice vinegar, or white wine vinegar

3/4 cup evoo

juice of one orange, plus 1/2 tsp zest

1/4 tsp salt

mix all ingredients in a jar and stir to combine.  Drizzle over salad.
