Whole Wheat Pancakes 

Mmmmm, aren’t pancakes so yummy! I love making up a big batch for my family, and freezing the extra to have all week long. It makes busy mornings so much easier.

My kids love this healthier version, and they are not any harder to make than the usual kind. I even mix up the dry ingredients and make a pancake mix that I can store, I only have to add the wet ingredients.  Just like store bought, but good for you!!

Whole wheat pancakes

1 1/2 cups whole wheat flour

3 1/2 tsp baking powder

1 tsp salt

2 packets of stevia

1 1/4 cups unsweetened almond milk

1 egg

3 tbs melted coconut oil

*blueberries, and mini chocolate chips are optional, but delicious!

In a large bowl sift together the flour, baking powder, salt, and stevia. Make a well in the center and pour in the milk, egg, and oil. Mix until smooth.

Heat a lightly oiled skillet over medium heat. Pour or scoop the batter onto the gridde. Use about 1/4 cup for each pancake.
