It’s Taco Tuesday again in our house! Tonight we had a yummy plate of chicken tacos with mango pico. They are mouth watering good, and just like my blog suggests; they are healthy tacos. Win win!
Recipe for the tacos:
2 chicken breasts cut into thin strips
2 tsp evoo
1 tsp cumin
1 tsp chili powder
1/2 tsp smokey paprika
1/2 tsp salt
6-8 corn tortillas
Shredded cheddar cheese
Combine chicken, oil, and spices in a plastic bag and shake to coat evenly. Marinate in fridge for at least one hour.
Place contents of bag in a large skillet and cook over medium high heat until chicken is throughly cooked, about 15 minutes.
In a medium skillet lightly coat with olive oil. Heat over medium heat. Lightly toast the tortillas in oil and set aside.
Fill tortillas with chicken, lettuce, and cheese. Top with mango pico de gallo.
1 large or 2 medium tomatoes diced
1 medium onion diced
1 bunch of cilantro chopped
1 large mango diced
Combine ingredients in a container and mix throughly. Cover and chill for at least one hour. Serve over tacos and with tortilla chips.
